Vieques #2: Isabel II

Welcome to Vieques

The ferry from the main island to Vieques arrives in a town called Isabel Segunda. It is considered the municipal capital, or administrative center of Vieques. Apparently, Isabel II and its surrounding areas are where most of the year-round Viequense residents live, whereas Esperanza, the other town on the island on the south coast, will have more tourists.

Mofongo

Mofongo is a green plantain-based dish. You cut, fry, and mash the plantains before mixing them with whatever other ingredients you want your mofongo to contain--vegetables, meat, seafood, etc.--and compacting the mixture in order to serve it in the shape of a cube or cylinder.

Mofongo is representative of the blending of cultures in the Caribbean throughout recent history. Mofongo seems to be associated most with Puerto Rico, but is common throughout many Caribbean countries. The invention of Mofongo was inspired by fufu, a cylindrical-shaped, dough-like food that is made of a mixture of various ingredients, often including cassava, plantains, flour, water, etc., and originates in Africa, a continent where many Puerto Ricans and inhabitants of other Caribbean islands have roots.
